Never made this before today and until now I’m pretty impressed. Turns out soup is actually an easy thing to make. Granted you have a good food and spice ratio I don’t think you can go wrong. This soup was so creamy and double delicious. I didn’t even add any cream like the recipe calls for.

Made this soup and just tweaked it a bit with some all in one curry spice ( a teaspoon amount for a tiny kick ) and some carrots. I’m guessing you could also leave out the bacon and just do a traditional potato and leak soup but the Lima way is definitely something something extra, always!

Ingredients

25g Butter

250g Bacon ( leave some cooked bacon to sprinkle over your serving )

1 medium Onion

1tsp Crushed garlic ( optional )

3 medium Potato’s

400g lean and clean leeks

2 large Carrots

1.4l Vegetables stock

142ml Cream

In a large pot melt your butter and then add your chopped onion and bacon bits. Fry until they start to turn golden brown. Add your garlic and mix in well. At this point you can add in all your chopped veggies, stir well then cover and turn down the heat. Cook gently for 5 minutes. Stirring or shaking occasionally as not to stick.

Pour in the stock, season and bring to boil. Cover and simmer for 20 min or until veggies are soft. Leave aside to cool for a few minutes once done. Then add to a food processor in batches until smooth. Using the hand help processor is also doable. Return to pan to heat up and as a side option add in the cream and stir well.

Serve that sucker and enjoy! Add some crispy bacon bits on top if you’d like. Fresh bread on the side with some butter is always a good idea!

✌️As a side note for myself, I added my curry spice to the onions and bacon when they were just about done. I then added a very small amount of hot water from the kettle so that the curry powder wouldn’t stick. And proceeded with the veggies and stock.
