I love any healthy Bar. It’s my real go-to when I’m to lazy to whip up something to eat or in a rush and want something like NOW or even when I’m craving something naughty ( but deliciously healthy ) after dinner.

When I discovered this recipe I honestly wasn’t to sure about it, but once I tasted them I knew I had found something that I’d hold onto forever😉

I found making these in little cupcake molds to be so much easier than a bread tin or square dish. Either or is fine. There is no one rule with these bars.

Ingredients

1 1/2 cups pecan halves

1 1/2 cups rolled oats

8 whole soft dates

1/2 cup coconut oil melted

Chocolate filling layer

1/2 cup coco powder

1/4 cup coconut oil melted

1/4 cup sweetener like honey, agave, maple syrup (more or less to taste)

Directions

– Crust : pulse all the ingredients in a food processor until you get a sticky dough mixture. Press crust mix into your mold. If you want to keep some aside to sprinkle on top of the chocolate mixture then you can do so.

– Chocolate : don’t forget to melt your coconut oil. Once this is done then just add the coco powder and sweetener and whisk until smooth. You can then pour this over your crust. I use a spoon to dollop the chocolate on top otherwise just smear all that goodness on however you want and then add the remaining crust bits if you did leave any a side and then throw that delicious goodness into the fridges to set. (You don’t have to physically throw it, placing it neatly on your fridge shelf is also just as good.

Leave it to chill for at least 2 hours and then once properly set allow yourself to tuck in and indulge on this healthy guilt free snack.

Be careful though because one is not enough. Exercise self control! Or don’t. Sometimes you just have to turn a blind eye and go for it. I say go for it!
