This dish was inspired by Kauai when lockdown started. We had to make do because we couldn’t order takeouts and this was one of our favorite dishes at the time so we improvised and scored ourselves 10/10. The egg bowl is so light on the tummy which is a big win for me and it’s delicious. At the beginning of lockdown, we had this dish at least once a week. Although it can take a bit of organizing or time, making everything separately, it’s well worth it.
We’ve tried this with beef sausage and smoked vienne sausage but it always comes to bacon being the best. It just works better. And we’ve also added steamed butternut with feta and that worked really nicely so that’s also an option to add. If you like Kale then mix it in with your baby spinach.
Ingredients
2-3 slices streaky bacon
1/2 red pepper
5 button mushrooms
a handful of baby spinach
1 egg
2 tbsp olive oil for cooking or spray & cook
Directions
If you’re using butternut then chop into small block and steam in the microwave for about 10-15 minutes. When your knife goes through then you know they are done. Drain and add about 1/4 of a fetta circle and mix together also adding in some herbs and salt and pepper if needed. This is also ideal to repair the day before to save some time.
Chop your red pepper and mushrooms finely and fry together in a pan in olive oil or spray & cook cooking spray till cooked. You can add some garlic or herbs and spices of your choice.
In another pan fry your bacon in some spray & cook cooking spray till cooked, turning over halfway.
When your ingredients are almost ready then lastly in a pan over medium heat add some olive oil or spray & cook again and fry your egg to your liking and till cooked.
Now to put your bowl together
Rince and place your spinach in the bowl, top with the cooked pepper and mushroom mix.
Dice up your cooked bacon or snip with your kitchen scissors into bits into your bowl. If you’re dong butternut and feta then add them at this point and finally top with your fried egg.
When your bowl is put together enjoy with some tabasco and you may devour it at your own pace.
