If you like falafel then you will no doubt enjoy these Chickpea & lentil patties. The macro content is really good and the fiber per serving is 4.6. Legumes on there own are such a good source of fiber and protein aiding in vitamin and nutrition absorption AND! they benefit the body greatly by improving your gut health and can help reduce blood sugar. With such amazing benefits, they’re super easy to add to any meal.
Andy devoured these on a burger roll with salad toppings and he couldn’t get enough. I’m sure you could roll them into small balls like falafel and enjoy them in a salad or wrap. I would definitely recommend making these for a quick & easy mealtime or when having family and friends over. We absolutely enjoy a good vegetarian dish from time to time.
If you’re a vegan then you can use a flax egg. I’ve yet to try this but it should work out the same.
Ingredients
1 tin chickpeas
3/4 cup cooked/canned lentils
1 egg
1/3 cup oat flour
2 tsp red miso paste
1 tsp crushed garlic
1/2 small onion chopped
1/2 tsp ground cumin
1/2 tsp ground coriander
1/2 tsp paprika
Directions
In a frying pan heat some olive oil over medium heat.
Combine all your ingredients into a food processor and blend till all is combined. Do not use a blender because it will become more of a puree and we do not want that.
When you’ve reached a good consistency make patties into your desired size and shallow fry for 2-3 minutes each side.
Once cooked on both sides remove and place on a plate ready to devour.
Side notes: managed to make 5 big patties from this recipe.
If the mixture is too wet then just add some more oat flour and if you think its too dry then just add some more lentils or chickpeas. I didn’t experience this but just in case you do.
Your pattie should not stick when flipping, if this happens then either you didn’t let it fry long enough or your mixture is too wet. Rather make a tiny patty first and fry to see how well it does.
If you don’t have miso paste then you can use a curry paste of some form. Miso is a fermented condiment and just adds more flavor.
If you don’t have a food processor then you can use a potato masher to mash your chickpeas & lentils and stir in the rest of your ingredients. It won’t be as smooth but you can still work with it.
