I’ve always wanted to make cauliflower based something but always thought it would be hard work or time consuming. Recently a friend of my husbands showed me how to make cauliflower tacos and firstly i’m amazed at how simple it is and secondly WOW! Delicious and quick. Needles to say i no longer feel like it’s a schlep and i would gladly jump at the opportunity to make this for lunch/dinner.
Instructions
- 1 big cauliflower
- 2 eggs beaten
- grated cheese (orange and white)
- taco seasoning (any seasoning you prefer)

Preheat oven to 180
For my cauliflower I wash and throw big chunks into the food processor and blitz it until fine, almost like a cauliflower rice. Steam it for about 5 minutes. Alternatively you can buy already prepared store bought cauliflower rice and steam it as per the packet instructions. Once ready place the cauliflower into your thin cloth or flour cloth and squeeze out all the water, making sure its completely dry. Place aside to cool down.
In another bowl add your 2 eggs and beat them. Stir in your grated cheese. Then combine your seasoning and your cauliflower.
Once all mixed, spoon the mixture onto your ready prepared baking tray. About 6 balls should fit. Then to make it easy use cling wrap to squash it down round and flat. Once all done place it into the oven. Bake for 5 minutes and then flip them and bake a further 5 minutes. Once done, take out and place them on a plate to cool and proceed with the next batch.
With our tacos, we had brown lentils (boiled and once done added taco seasoning). This was so delicious. Everyone enjoys their own choice of filling i guess but we used mince and your normal tomato, avo and lettuce filling. This was by far the most delicious homemade healthy taco alternative i ever had.
