I made these by chance and when I taste-tested them I was like wow, these babies are delicious! I even made them the next day just to make sure I wasn’t kidding myself. It tastes like a heavenly treat. They make for the perfect tea time snack!
I guess you could say it almost mimics a blondie, which is the opposite of a brownie but also somewhat healthier.
This recipe is very easy to make because it’s just combining wet and dry ingredients together and then BAM you have just created one of the most delicious snacks for the week. Bon appétit!
Ingredients
Wet Ingredients
3 medium ripe bananas
1 large egg
3 Tbsp unsalted butter/coconut oil melted
2 Tbsp almond milk
1 tsp vanilla extract
Dry ingredients
1/3 cup coconut sugar
3/4 cup oat flour
1 tsp baking powder
1 tsp cinnamon
1/3 cup dark chocolate chips
Directions
Heat oven to 180ºC and line a square baking dish with baking paper or spray & cook.
In a food processor, add all the wet ingredients and blend until all combined.
In another bowl add in all your dry ingredients and sift with a fork so everything is mixed together.
Now you can add the wet ingredients to the dry ingredients and stir till all combined.
Pour mixture into your prepared baking dish and bake for 20-25 minutes. Your baking stick should come out clean when poked in the center.
Remove from the oven and set aside to cool before cutting it into squares.
I get 9 big squares or 12 much smaller perfect quick snack-size squares.
Side notes: At one time I didn’t have vanilla essence so I used some maple cream that we had in the fridge, brought back from when we visited the States and it was delicious.
Coconut sugar is said to be the same as normal brown sugar minus the caramel taste. I’m sure brown sugar will also work.
You could use other healthy flour alternatives like white wheat flour, almond flour, etc. I haven’t tried these other healthier flour alternatives, as oat flour is my favorite go-to and I always have it on hand for baking, But I’m sure it would work the same.
If you want extra protein, try adding in a scoop of vanilla protein powder or pea protein. Note to self though that it would probably change the flavor.
You could also add in some finely chopped nuts, 2 Tbsp chia seeds, or dried fruit like cranberries or goji berries rather than chocolate chips if you desired.
I also like to add 1 Tbsp of flaxseed to my oats and blend them into a flour-like consistency.
I’ve also made this recipe with normal rolled oats and it was actually nicer.
Will definitely be giving this one ago. Literally have 3ripe bananas and all of the other ingredients.
