This HAS to be the easiest muffins I have ever made. When I tasted these, my Mmmmm moment would go louder with every bite. I was pretty impressed with how these turned out. As a breakfast option, it could be good with some yogurt on the side.

I added peanut butter because I am just a lover of peanut butter and a girl needs peanut butter by her side. I made these in mini muffin sizes and that’s why they make for a perfect quick snack when you need something to keep you going till your next meal. Feel free to leave the peanut butter out and substitute it for something else.

Ingredients

1/2 cup rolled oat
3 eggs
2 large bananas mashed
1/4 cup honey
1 tsp baking powder
2 tsp cinnamon
2 Tbs peanut butter ( i used sugar-free)

Directions

Preheat your oven to 180º C
In a mixing bowl add your mashed banana and eggs and PB and stir till everything is evenly mixed.
Add the rest of your ingredients and combine them.
Next, pour your batter into greased muffin trays and bake for 20-25 minutes.
Makes about 12 big muffins.

Side Note: you could change it up from time to time and add some wheat bran with the oats, a handful of raisins or chopped pecans and maybe even some chocolate chips. Just keep an eye on your consistency and bake time then.
