Oh my goodness this chicken is absolutely delicious. And to think that all Andrew did was use some basic guidelines and go with his heart. Chicken is actually one of my favorite meals and I can have chicken 3 nights in a row and it won’t even bother me.
Blogging this recipe because it is definitely for keeps. I should probably also push it to the top of my list.
Ingredients
- 6 Chicken pieces (we used thighs)
- 1 Onion grated
- 1 tsp crushed garlic
- 2 tsp Olive oil
– For pestle and mortar (crush all together)
- 1 Tsp Fennel seeds
- 1 tsp coriander seeds
- 1/4 tsp paprika
- Salt and pepper for taste
- Original Aromat
- Pinch of Garlic salt
- Hint of Thyme
Directions
Preheat oven to 180 degrees.
Grate your onion and set aside. In the pestle and mortar put your herbs and spices and start to crush it into a fine powder. Once fine add the garlic and mix it in ( still crushing ) then add olive oil and grated onion and mix it till all is combined.
Place chicken in oven dish skin side up. Apply the marinade to the chicken covering almost the whole surface. Cover with foil and bake for 50 minutes, remove the foil and bake for a further 20 minutes. If need be you can turn the chicken. Poke to make sure it’s cooked.
Serve up this delicious goodness with rice and enjoy!
