Only one word is needed to describe this delicacy and that is Dessert. A scrumptious dessert for breakfast for those snug days. I cannot believe how delicious oat bake is and although this was for breakfast it would actually make for a delicious snack to get you through the day.

Oats are highly beneficial and are fabulous to have for breakfast because you’ll feel fuller for longer. With an oat bake recipe, you have your basic standard ingredients and then there is still so much room for you to just throw whatever goodness in and make it a grand show.
For example, in this recipe, we added pecan nuts as a topping and then some coconut sugar making it taste almost exactly like a pecan nut pie! BUT you can change it up by adding berries, raisins or cranberries, chopped apples, and cinnamon or keep it basic and just drizzle melted peanut butter on the top at the very end. You have one recipe but many ways to make it and that’s why this recipe is so great. You could also pour the batter into muffin cups and make muffins if you’d prefer.

Alternatives for this dish would be
Gluten free oats for a gluten free option
Vegan rout then just use flax egg and plant based milk
Sugar free just use stevia, mashed banana or even dates.

Ingredients

Dry Ingredients
1 cup of oats
1/2 tsp baking powder
1 tsp cinnamon

Wet Ingredients
1 egg
1 cup milk
1 banana mashed
1 tsp vanilla essence
1 tsp honey
2 tsp melted butter/coconut oil *optional

Toppings
1/2 cup chopped pecans
2 tsps coconut sugar

Directions

Preheat your oven to 180º C and prepare your baking dish with parchment paper or use spray & cook.
In a bowl add your oats, baking powder, and cinnamon and combine using a fork.
Mash your banana with a fork on a side plate.
In a separate bowl or jug add in all your wet ingredients and use a whisk to combine everything.
Add wet ingredients to dry ingredients and mix with a spatula until everything is combined.
Pour your batter into the ovenproof dish, sprinkle on top with chopped pecan nuts and 2 tsp coconut sugar and bake for 30 min.
When you poke it with a knife it should come out clean and then it’s ready.
Remove and allow cooling before dishing.

What Else To Add

  • Sweet potato instead of banana and then add some mixed spice, pecans and top with more pecans and brown sugar
  • Chopped cubed apples and cinnamon can also opt for brown/coconut sugar on the top
  • Raisins or cranberries
  • Strawberries and or blueberries. You can lay some on the bottom, pout the batter and lay some on top
  • When using mashed banana you can also add some sliced banana to the top
  • Drizzle with melted peanut butter and coconut shavings when you remove it from the oven
  • Chocolate chips and dried fruit
  • Can crumble your oat bake over some fruit and serve with yogurt
