These banana & vanilla protein flapjacks are an absolute treat! They take up absolutely no time when you decide randomly that today is the day for these amazing flapjacks. Sometimes I top mine with sugar-free peanut butter and syrup and you wouldn’t even tell that it wasn’t the real thing. It’s better!
These are also great on weekends and with coconut yogurt and fruit. My husband even enjoys these suckers and its a good way to get in some extra protein without the effort. You can double up and enjoy these as a meal or stick to few and just have a delicious snack.
Ingredients
1 large banana mashed
2 eggs whisked
2 serves of vanilla protein
1/4 tsp baking powder
1/2 tsp cinnamon
30ml Greek yogurt
1/4 cup ( 60ml ) almond milk
Directions
Heat your pan on medium heat on the stove and add a tsp of oil to cook or use spray and cook, it works just as well.
Place your mashed banana into a mixing bowl and stir in the 2 eggs until it is nicely combined. Next, add your protein powder, cinnamon and baking powder and give it a good stir. Next, add in your yogurt and almond mind and make sure everything is nicely combined.
At this point your batter is ready!
Scoop spoon fulls of batter into the pan, use your spoon to spread the batter so it’s not to thick. Once you see hollow bubbles you know it’s time to flip. Cook for about another minute and then it should be done.

Side Note: If your pan is too hot it will cook too quickly and therefore not cook through.
