I love it when a recipe is simple and quick, you’ll probably hear me say this a 1000 times over, but I do and then add peanut butter to that equation and I love it even more.
These Peanut Butter Cookies are by far the most delicious I’ve ever had. And the fact that they are homemade makes it taste even better. I can easily have at least four at a time and not even feel guilty. And just as quickly as I make them is how quickly they disappear.

They bake really fast so you have to keep an eye on them. However, I always leave them a little longer in the oven so they get a little bit darker in color, almost a deep golden brown. It’s better this way I think.
I honestly always eyeball the ingredients and add more peanut butter than necessary because would you even taste it after 2 big tablespoons? No! and that’s why I add extra for just in case and because I’m that committed but because of this my mixture is sometimes a bit wet then I just keep adding flour little by little and knead with my hand till it’s no longer sticky. Easy fix.
I alternate between a double crunch and smooth peanut butter. But most times its double crunch for the win. It’s nice to have those crunchy peanut bits in between it all.

Ingredients

1 1/2 cups all-purpose flour
1/2 cup butter
1 cup granulated white or brown sugar
1 egg slightly beaten
1/2 cup peanut butter
1 tsp vanilla essence

Directions

Preheat your oven to 180º C and line your baking tray with baking paper.
In your mixing bowl cream your butter and sugar till blended but not fluffy. Then add your slightly beaten eggs, peanut butter, and vanilla essence and mix thoroughly.
Next stir in your dry ingredients, little at a time and when all the ingredients are mixed you might have to use your hands to knead the dough for a bit. If it feels to wet, add a little more flour.
Roll into balls, place on the baking tray and flatten slightly with a fork or back of a tablespoon. Dip your fork in flour before pressing into the dough to flatten so it doesn’t stick.
Bake for 12-15 minutes. I like to bake them for 20 minutes because I like them more crispy and a darker brown.
Remove cookies from the oven when done and place them on a cooling tray.

Store these cookies in your cookie jar or airtight container and enjoy them on a regular basis.
If you like peanut butter then be careful because these beauties can be pretty addictive.
